科學分析熷烏龍茶
報乎你知,臺灣知名的烏龍茶加入了科學改良,利用科學技術讓好的成份增加,去除澀味,身價竟可翻2到3倍,還讓臺灣烏龍茶與世界名茶齊名,獲得日本雜誌專文報導,並吸引日本品茗饕客按圖索驥來臺灣買茶。
科技部民國102年起透過「產學技術聯盟合作計畫」(產學小聯盟),鼓勵學術界以過去研發成果為主軸,提出協助與服務產業界的計畫。其中,國立中興大學生物科技學研究所教授曾志正執行的「台灣茶製程技術產學聯盟」,輔導茶農研發新型茶品「熷烏龍茶」,吸引日本雜誌專文介紹「熷烏龍茶」為世界上極品好茶。
烏龍茶經反覆烘焙與陳放轉化成熷烏龍茶時,主要茶葉成份的變化。我們研究團隊利用科學儀器-分析茶湯後發現熷烏龍茶具有下列幾項特點,進而了瞭解熷烏龍茶於反覆烘焙與陳放製程中茶葉酚類與揮發性成份的化學變化:
第一、原茶湯中水溶性主要成份,包括游離胺基酸、咖啡因、兒茶素類、黃酮醇配醣體等的含量均明顯減少。
第二、沒食子酸的含量顯著提升,推論為酯型兒茶素(帶有沒食子酸結構的兒茶素分子)於烘焙時裂解所產生。
第三、新產生楊梅黃酮、檞皮素與山柰酚等黃酮醇成份,推論為此三類黃酮醇配醣體於烘焙時去醣降解所產生。
第四、原茶湯中含量豐富且具揮發性的長鏈烷類與長鏈酸類分子會顯著降解。
第五、新產生多種吡咯衍生物,例如2-乙醯基吡咯與2-甲醛基吡咯等具烘焙風味的成份。
兒茶素究竟是什麼?
兒茶素其實就是在茶中可以輕易品嘗到的澀味元凶,他的多重功效與只能從茶葉中攝取的獨特性造就他今日的引領風潮。而最常見的一種兒茶素名為EGCG,為最具生物活性的一種兒茶素,具有高度抗氧化性。
茶湯中會引起澀味與苦味的兒茶素衍生物以及黃酮醇配醣體,經過烘焙後含量會降低並且轉換出大量的沒食子酸(gallic acid)與沒食子兒茶素沒食子酸酯(GCG),推測是經由表沒食子兒茶素沒食子酸酯(EGCG)產生裂解與異構化反應而來。
相反的,鮮葉中含量豐富的直鏈與支鏈碳氫化合物(長鏈烷類與長鏈酸類分子) 等揮發性成份於溫度120°C以下烘焙則呈現相對穩定,經烘焙後並無明顯變化,然而經過長時間儲存後卻會明顯的降低。綜合上述得知,熷烏龍茶在陳放的過程(緩慢的氧化或聚合)中對於揮發性成份(香氣)的影響較大,而烘焙(化學的氧化或聚合)則對於水溶性成份(口感)的影響較大。
此外,我們也針對烘焙與陳放此兩大工序技術對熷烏龍茶內含成份轉化的個別影響做分析。結果顯示,熷烏龍茶茶湯中的酚類化合物含量在烘焙之後會有顯著的變化,然而這些酚類化合物在陳放過程中相對穩定並無明顯變化。
