減脂瘦身最夠力
茶是全世界最多人喝的飲料，根據統計，全球有超過一半以上的人每天喝茶，除了飲食文化使然，更有許多人是看中它有「瘦身」功效而經常飲用。
廣告強打，吃完大餐後喝杯綠茶，有助降低體脂肪，是真的嗎？確實，茶葉中含有不少成分有助於維持體態，其中名氣最響亮的就是兒茶素。
綠茶：含兒茶素最高
兒茶素屬於多酚類（polyphenol）物質，也常被稱為兒茶多酚、茶單寧，是茶葉中苦澀味道的主要來源，最常見的一種是EGCG，具有高度抗氧化性。
台北市營養師公會居家照護營養師程涵宇指出，兒茶素可抑制腸道內澱粉分解酵素的活性，降低腸道吸收葡萄糖的速度，因此能減緩飯後血糖上升。也有研究指出，兒茶素可抑制脂肪組織增生、促進細胞新陳代謝，降低脂肪堆積。
此外，運動時喝茶更有助於燃脂，兒茶素厥功甚偉。程涵宇解釋，由於運動時會刺激人體正腎上腺素分泌，誘發脂解酶作用，將脂肪轉化成運動時所需能量，本就有消脂作用，不過，人體中另一種酵素COMT會分解正腎上腺素，影響脂肪代謝，如果同時喝茶，當中的兒茶素恰好能抑制COMT作用，便能提高17％的燃脂效率。
而在各類茶種當中，兒茶素含量最高的是未發酵茶，例如綠茶、煎茶、龍井；其次為半發酵茶，如文山包種茶、凍頂茶等輕度發酵茶，及東方美人茶等重發酵茶；而含量最少的則是全發酵茶，如紅茶，因此過去多半認為綠茶的減肥效果比較顯著。
烏龍茶：飢餓素促進腸胃蠕動
然而，除了兒茶素之外，2011年刊登在《營養》期刊中的研究發現，其他茶多酚如茶黃素、茶紅素也有消脂效果，而烏龍茶、紅茶中都存在茶黃素、茶紅素。程涵宇指出，人體研究發現，連續喝6周的烏龍茶，可降低血脂肪濃度。
中興大學生物科技學研究所教授曾志正實驗發現，烏龍茶含有飢餓素，可促進腸胃排空、刺激生長激素分泌等功效，但同時也會有飢餓感。
烏龍茶中的飢餓素又稱「茶飢素」，可提高5倍食欲，使喝茶者感覺飢餓，因此促進腸胃蠕動。不過有趣的是，在茶飢素的作用下，身體運作活化了，肚子雖餓，卻又不會提高食量，因此不怕吃太多而變胖。
研究進一步分析，各類烏龍茶種都有茶飢素成分，其中又以「青心烏龍」能提高食欲5倍居冠。其他茶種包括鐵觀音、武夷茶和白毫烏龍，則可提高食欲2倍。
普洱茶：單寧酸阻止小腸吸收脂肪
源於古中國的普洱茶，也是國人經常用以去油解膩的茶飲，台灣大學食品科學系教授孫璐西於2000年時發表研究指出，普洱茶有抑制肝臟膽固醇合成的效果，並可有效降低血漿中的膽固醇、三酸甘油酯和游離脂肪酸，增加糞便中的膽固醇排除量，同時抑制低密度脂蛋白（LDL）氧化。
細究其因，是普洱茶所含多酚成分當中的水解型鞣酸單寧（strictinin）發揮功效。程涵宇表示，人們進食時，食物中的油脂（三酸甘油酯）會進到腸胃中，並透過胰臟分泌的「胰脂解酵素」幫助腸胃吸收，成為人體需要的能量，也就是說，啟動人體吸收脂肪的關鍵，就在於「胰脂解酵素」。
而普洱茶含有的水解型鞣酸單寧，能有效抑制胰脂解酵素產生，因此我們吃下肚的油脂無法被小腸吸收，就會跟著糞便排出體內。「很多人喝了普洱茶後，糞便變軟，正是因為裡面的油脂含量高。」利用吃多但身體不吸收的方式，自然能有維持體重，甚至減肥的效果。
她也強調，若要事半功倍，每天喝一杯茶（約350∼400cc），搭配阻力運動，不但可降體脂肪，還能提升肌肉量，瘦身、健美的效果最佳。
